Seeds of Health

I no longer recommend flaxseed oil. It is highly unstable and prone to oxidation and the formation of free radicals. High-quality, cold-pressed flax oil, stored in the refrigerator in a dark, airtight container and used by the date indicated, is probably okay. However, even under the best of circumstances, it has a potential for breakdown, and studies show that eating oxidized flaxseed oil is associated with decreased blood levels of antioxidants.

Flaxseed is another story. Its shelf life, when kept dry at room temperature, is roughly 1,000 to 2,000 years. Imagine, life in a dormant state, protected for a thousand years. When you grind up the seeds, use them immediately and consider the forces of dormant life enriching and protecting you.
